- 8 oz pasta of your choice (penne, spaghetti, or fettuccine work well)
- 2 cups cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup fresh basil, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- Grated Parmesan cheese for serving
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- Sauté the Garlic and Tomatoes: In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 30 seconds, until fragrant. Then, add the halved cherry tomatoes, sprinkle with salt and pepper, and cook for about 5-7 minutes or until the tomatoes soften.
- Make the Sauce: Pour in the heavy cream and stir well, allowing it to simmer for a couple of minutes. Add in the reserved pasta water, one ladle at a time, until it reaches your desired creaminess.
- Combine Everything: Add the cooked pasta to the skillet with the sauce and toss to coat. Stir in the fresh basil, allowing it to wilt slightly.
- Serve: Dish out the pasta onto plates and generously sprinkle with grated Parmesan cheese before serving.
Notes
For a vegan option, replace heavy cream with coconut cream or cashew cream and use vegan Parmesan cheese.
