Description

This Thai Potsticker Soup combines tender potstickers in a rich and creamy coconut broth, bursting with flavors from fresh ginger, garlic, and lime juice.


Ingredients

  • 12 pieces Potstickers (homemade or frozen)
  • 4 cups Chicken or Vegetable Broth
  • 1 tablespoon Fresh Ginger (minced)
  • 3 cloves Garlic (minced)
  • 1 can Coconut Milk
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Fresh Lime Juice
  • 1/4 cup Cilantro (chopped)
  • 1/4 cup Green Onions (sliced)

Instructions

  1. Start by heating a bit of oil in a large pot over medium heat. Add the potstickers and fry until golden brown and crispy, about 3-4 minutes. Remove from the pot and set aside.
  2. In the same pot, add the minced ginger and garlic. Sauté for about 1-2 minutes until fragrant.
  3. Pour in the chicken or vegetable broth along with the coconut milk. Stir well to combine.
  4. Add soy sauce and lime juice to the pot, stirring to blend. Let the mixture simmer for about 5-10 minutes.
  5. Finally, add the crispy potstickers back into the pot and let them heat through for a couple of minutes. Serve hot, garnished with chopped cilantro and sliced green onions.

Notes

Potstickers can be made from scratch or purchased frozen. Use fresh garlic and ginger for better flavor.
