Description
Bright blue, soft, and full of cookie flavor, these Cookie Monster Cinnamon Rolls are a fun twist on the classic brunch treat.
Ingredients
For the Dough:
Warm whole milk – 1 cup
Active dry yeast – 2¼ tsp
Granulated sugar – ⅓ cup
Unsalted butter (melted) – ¼ cup
Large eggs – 2
All purpose flour – 4 cups
Salt – 1 tsp
For the Filling:
Softened butter – ⅓ cup
Brown sugar – ½ cup
Ground cinnamon – 1 tbsp
Mini chocolate chips – ⅓ cup
Crushed chocolate chip cookies – ⅔ cup
Blue food coloring – a few drops
For the Frosting:
Powdered sugar – 1 cup
Softened cream cheese – 4 oz
Vanilla extract – 1 tsp
Milk – 2 tbsp
Extra cookie crumbs – for topping
Instructions
1. Warm the milk and activate the yeast with sugar.
2. In a large bowl, mix butter, sugar, eggs, and flour. Add the yeast mixture.
3. Knead until soft and elastic. Let rise for 1 hour.
4. Roll dough into a rectangle. Spread with blue cookie filling.
5. Roll the dough into a log and cut into slices.
6. Place in baking dish and let rise for 30 more minutes.
7. Bake at 350°F for 20 to 25 minutes until golden.
8. Mix frosting ingredients until smooth.
9. Frost rolls while warm and top with cookie crumbles.
Notes
Dough can be prepared the night before and chilled.
Freeze extra rolls for up to 2 months in airtight wrap.
Substitute almond milk and vegan butter for dairy free version.
