Ingredients

  • 1 tablespoon Imperial Sugar Extra Fine Granulated Sugar
  • 2 tablespoons unsalted butter
  • 1½ teaspoons peppermint extract
  • 22 ounces classic white chocolate chips
  • 8 mint candies or 4 peppermint candy canes, crushed (for garnish)

Instructions

  1. Crush the Mint Candies: Place mint candies or candy canes in a ziplock bag and crush them into fine pieces. Set aside for garnish.
  2. Prepare the Cream Mixture: In a small saucepan, combine the whipping cream and granulated sugar over medium heat until the sugar dissolves and cream is warm. Remove from heat.
  3. Combine with Chocolate: Add unsalted butter and peppermint extract to the warm cream mixture and stir until the butter melts.
  4. Melt the White Chocolate: Place white chocolate chips in a heatproof bowl and pour the warm cream mixture over them. Let sit for 2 minutes, then stir until smooth, microwaving if necessary.
  5. Chill and Shape the Mixture: Refrigerate for 1-2 hours until firm, then portion and roll each into smooth balls.
  6. Coat the Truffles: Roll each truffle in crushed peppermint candies, pressing gently. Place on a parchment-lined tray and chill for another 15-20 minutes before serving.
