Description
Juicy, smoky, and perfectly seasoned copycat Chipotle chicken marinated in a blend of chipotle peppers, spices, and citrus for that authentic restaurant flavor.
Ingredients
2 lbs boneless skinless chicken thighs
3 chipotle peppers in adobo sauce, chopped
2 tbsp adobo sauce (from the can)
3 cloves garlic, minced
2 tbsp olive oil
2 tbsp lime juice
1 tbsp apple cider vinegar
1 tsp ground cumin
1 tsp smoked paprika
1 tsp oregano
1 tsp salt
1/2 tsp black pepper
Instructions
1. In a blender or food processor, combine chipotle peppers, adobo sauce, garlic, olive oil, lime juice, vinegar, cumin, paprika, oregano, salt, and pepper until smooth.
2. Place chicken thighs in a large bowl or zip-top bag, pour marinade over them, and coat evenly.
3. Cover and refrigerate for at least 1 hour, ideally 4–8 hours for best flavor.
4. Preheat grill or skillet to medium-high heat.
5. Cook chicken for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C).
6. Let rest for 5 minutes before slicing or serving.
7. Serve in burritos, tacos, bowls, or salads for a true Chipotle-style experience.
Notes
For extra smoky heat, add an additional chipotle pepper to the marinade.
Chicken thighs are preferred for juiciness, but chicken breasts can be used with adjusted cooking time.
Leftovers can be stored in the fridge for up to 4 days or frozen for 2 months.
