- 1 large egg

- 2 tablespoons butter or oil for frying
- ¼ cup shredded cheddar cheese
- 1 minced jalapeño

Instructions
- In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Whisk until evenly blended.
- Add the fresh corn kernels and chopped scallions or chives to the bowl. Toss gently to coat the corn with the flour mixture.
- In a separate bowl, whisk the egg and milk together until frothy.
- Pour the wet mixture into the dry ingredients. Stir just until combined; the batter should be thick but scoopable.
- Heat a nonstick skillet over medium heat and add the butter or oil. Drop spoonfuls of the batter into the skillet and flatten into round fritters. Cook each side for about 3 minutes until golden and crispy.
- Transfer the fritters to a paper towel-lined plate to drain excess oil. Enjoy warm for the best flavor!
