- 8 oz chorizo, crumbled
- 4 cups cornbread, slightly stale, crumbled
- 1 medium yellow onion, chopped
- 2 stalks celery, chopped
- 1 cup low-sodium chicken broth
- 2 large eggs, beaten
- 1 tsp poultry seasoning
- 1 cup sharp cheddar cheese, shredded
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat your oven to 350°F (175°C) and lightly coat a baking dish with nonstick spray.
- In a skillet over medium heat, cook the crumbled chorizo until browned, around 5-7 minutes. Remove from the skillet.
- In the same skillet, sauté the chopped onions and celery until soft, about 4-5 minutes.
- In a large bowl, combine the crumbled cornbread, cooked chorizo, sautéed veggies, chicken broth, beaten eggs, poultry seasoning, and half of the shredded cheese. Mix gently until just combined.
- Transfer the mixture into the prepared baking dish and top with the remaining cheese. Bake for 30-35 minutes until the top is golden brown.
- Allow the casserole to cool slightly before garnishing with fresh parsley.
Notes
Choosing slightly stale cornbread helps it absorb moisture better. This casserole can be prepared ahead of time and refrigerated overnight.
