Ingredients

  • 8 eggs
  • ¼ teaspoon garlic powder
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • ¾ cup 2% or full-fat cottage cheese
  • ½ cup shredded or shaved Parmesan cheese
  • 3 cups roughly chopped fresh spinach
  • ½ cup finely diced yellow onion or green onions

Instructions

  1. Preheat the oven to 375°F. Spray a 9×9 inch baking dish with nonstick cooking spray.
  2. In a medium bowl, whisk together the eggs, garlic powder, salt, and black pepper until well combined.
  3. Gently fold in the cottage cheese, Parmesan cheese, chopped spinach, and diced onion.
  4. Pour the egg mixture evenly into the prepared baking dish.
  5. Bake for 30 to 35 minutes until the center is set and a toothpick inserted in the middle comes out clean.
