- 3 cups roughly chopped fresh spinach
- ½ cup finely diced yellow onion or green onions
Instructions
- Preheat the oven to 375°F. Spray a 9×9 inch baking dish with nonstick cooking spray.
- In a medium bowl, whisk together the eggs, garlic powder, salt, and black pepper until well combined.
- Gently fold in the cottage cheese, Parmesan cheese, chopped spinach, and diced onion.
- Pour the egg mixture evenly into the prepared baking dish.
