Description

A comforting dish of flour tortillas filled with scrambled eggs, sausage or bacon, and rich country gravy, topped with melty cheese.


Ingredients

  • 8 flour tortillas
  • 1 cup scrambled eggs
  • 2 cups country gravy
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 cup cooked sausage or bacon (optional)
  • 1/2 cup diced onions (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the diced onions until translucent. If adding sausage or bacon, cook until browned.
  3. In a mixing bowl, whisk together the scrambled eggs, seasoned with salt and pepper.
  4. Warm the tortillas in a skillet or microwave until pliable.
  5. On each tortilla, spoon some egg mixture and any onion or meat filling, then roll tightly.
  6. Spread some country gravy on the bottom of a baking dish.
  7. Place the rolled enchiladas seam side down in the dish.
  8. Pour the remaining country gravy over the top and sprinkle with cheese.
  9. Bake for 20-25 minutes until heated through and cheese is bubbly.
  10. Garnish with fresh cilantro and serve warm.

Notes

To customize, try using whole wheat tortillas, spice up the gravy, or experiment with different cheeses.
