Description
A comforting dish of flour tortillas filled with scrambled eggs, sausage or bacon, and rich country gravy, topped with melty cheese.

- 8 flour tortillas
- 1 cup scrambled eggs
- 2 cups country gravy
- 1 cup shredded cheese (cheddar or a blend)
- 1 cup cooked sausage or bacon (optional)
- 1/2 cup diced onions (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the diced onions until translucent. If adding sausage or bacon, cook until browned.
- In a mixing bowl, whisk together the scrambled eggs, seasoned with salt and pepper.
- Warm the tortillas in a skillet or microwave until pliable.
- On each tortilla, spoon some egg mixture and any onion or meat filling, then roll tightly.
- Spread some country gravy on the bottom of a baking dish.
- Place the rolled enchiladas seam side down in the dish.
- Pour the remaining country gravy over the top and sprinkle with cheese.
- Bake for 20-25 minutes until heated through and cheese is bubbly.
- Garnish with fresh cilantro and serve warm.
Notes
To customize, try using whole wheat tortillas, spice up the gravy, or experiment with different cheeses.
