- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 6 tbsp unsalted butter
- 4 cloves garlic, minced
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tsp Dijon mustard
- Juice and zest of 1 lemon
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 12 oz bowtie (farfalle) pasta
- 2 cups broccoli florets
- 1/2 cup reserved pasta water
- 1/2 cup grated Parmesan cheese (plus extra for topping)
Instructions
- Cook the Pasta and Broccoli: Boil salted water, add bowtie pasta, and cook until al dente (10-12 minutes). In the last 3 minutes, add broccoli florets. Reserve 1/2 cup pasta water, then drain.
- Season the Chicken: In a bowl, mix chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
- Cook the Chicken: Heat olive oil in a skillet over medium-high heat, cook chicken until golden brown (6-7 minutes), then remove from skillet.
- Make the Sauce: In the same skillet, melt butter, sauté garlic (1-2 minutes), then add red pepper flakes, Dijon, lemon juice, zest, and herbs; season with salt and pepper.
- Combine and Serve: Toss pasta, broccoli, and chicken in the skillet, add reserved pasta water until the desired sauce consistency is reached, and stir in Parmesan until creamy.
Notes
For extra flavor, add capers or substitute chicken for shrimp. Cook pasta al dente to prevent sogginess.
