Ingredients

  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes
  • 1 cup mushrooms, halved
  • 2 tablespoons olive oil
  • 4 tablespoons cowboy butter
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon mixed herbs (thyme, oregano, etc.)
  • Salt and pepper to taste
  • A pinch of chili flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the sliced zucchini, bell pepper, cherry tomatoes, and mushrooms.
  3. In a separate bowl, mix the cowboy butter, lemon juice, Dijon mustard, minced garlic, mixed herbs, salt, pepper, and chili flakes.
