  • 1/2 cup Grated Parmesan Cheese (omit for dairy-free)
  • 1 loaf Crusty Bread (for dipping)
  • Fresh Herbs (like basil or parsley)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  2. Toss in the chopped onions and garlic. Sauté until the onions become translucent, around 3-4 minutes.
  3. Add sliced carrots and diced butternut squash. Sauté for another 5 minutes.
  4. Pour in the chicken or vegetable broth and bring to a simmer. Stir in the tortellini and cook according to package instructions, about 4-5 minutes until just tender.
  5. Add spinach, dried thyme, salt, and pepper. Once the greens wilt, serve and garnish with grated Parmesan and fresh herbs.
