Instructions
- In a large pot, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
- Toss in the chopped onions and garlic. Sauté until the onions become translucent, around 3-4 minutes.
- Add sliced carrots and diced butternut squash. Sauté for another 5 minutes.
- Pour in the chicken or vegetable broth and bring to a simmer. Stir in the tortellini and cook according to package instructions, about 4-5 minutes until just tender.
- Add spinach, dried thyme, salt, and pepper. Once the greens wilt, serve and garnish with grated Parmesan and fresh herbs.
Notes
