Ingredients

  • 1 Onion, chopped
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 3 cloves Garlic, minced
  • 4 cups Chicken broth
  • 2 cups Cooked chicken, shredded
  • 1 package (9 ounces) Cheese tortellini
  • 2 cups Spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving, as desired

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until soft.
  3. Stir in garlic and cook for 1 minute more.
  4. Pour in chicken broth and bring to a boil.
