- 2 Carrots, diced
- 2 Celery stalks, diced

- 4 cups Chicken broth
- 2 cups Cooked chicken, shredded
- 1 package (9 ounces) Cheese tortellini
- 2 cups Spinach
- Salt and pepper to taste
- Parmesan cheese for serving, as desired
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until soft.
- Stir in garlic and cook for 1 minute more.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken and tortellini; reduce heat and simmer until tortellini is cooked.
- Stir in spinach and cook until wilted.
- Season with salt and pepper.
- Serve hot, topped with Parmesan cheese.
