A warm and comforting chicken soup with a bright lemon flavor, perfect for chilly days.
Ingredients

- 1 lb chicken breast, diced
- 1 medium onion, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1/2 cup rice or orzo
- 1/4 cup fresh lemon juice
- 2 teaspoons dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onions, diced carrots, and celery. Sauté for about 5 minutes until they’re softened.
- Add the minced garlic and diced chicken to the pot, stirring until the chicken is browned, around 5-7 minutes.
- Pour in the chicken broth, and bring the mixture to a boil.
- Stir in your choice of rice or orzo, along with the oregano, salt, and pepper. Reduce the heat to a simmer and cook until the rice is tender, approximately 15 minutes.
- Once the rice is cooked through, stir in the fresh lemon juice and adjust the seasoning to taste.
- Ladle the soup into bowls and garnish with freshly chopped parsley.
Notes
For a thicker consistency, reduce the amount of broth or add more rice/orzo. Fresh ingredients enhance the flavor significantly.
