- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 medium potatoes, diced
- 1 cup green beans
- 1 cup peas
- 1 medium bell pepper, chopped
- 4 cups vegetable broth
- 2 tablespoons tomato paste
- 2 tablespoons soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 3-5 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the sliced carrots, diced potatoes, and bell pepper. Sauté for about 5-7 minutes until they start to soften.
- Pour in the vegetable broth, tomato paste, soy sauce, thyme, and rosemary. Bring to a gentle boil.
- Reduce the heat and let it simmer for about 20 minutes, adding green beans and peas in the last 5 minutes of cooking.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving. Enjoy!
