- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary

Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onions and garlic, and sauté until translucent and fragrant, about 5 minutes.
- Stir in the sliced carrots, diced potatoes, green beans, peas, and chopped bell pepper. Cook for an additional 5 minutes to soften the veggies.
- Pour in the vegetable broth, and add the tomato paste, soy sauce, thyme, rosemary, salt, and pepper. Bring the mixture to a gentle boil.
- Once boiling, reduce the heat and let the stew simmer for about 15-20 minutes, or until all vegetables are tender.
- Taste and adjust the seasonings if needed. Serve hot, garnished with fresh parsley.
