- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 medium potatoes, diced
- 1 cup green beans, fresh or frozen
- 1 cup peas, frozen
- 1 medium bell pepper, chopped
- 4 cups vegetable broth
- 2 tablespoons tomato paste
- 2 tablespoons soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil over medium heat in a large pot.
- Add the chopped onion and garlic, sautéing for about 3-4 minutes until fragrant and soft.
- Stir in the carrots, potatoes, and any substitutes you’re using. Cook for an additional 5 minutes.
- Add the vegetable broth, green beans, peas, bell pepper, tomato paste, soy sauce, thyme, and rosemary. Stir well.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until vegetables are tender.
- Adjust the seasoning with salt and pepper to taste. Serve hot, garnished with fresh parsley.
