Description

A hearty and comforting Irish Vegetarian Stew filled with fresh vegetables and rich flavors, perfect for cozy gatherings or chilly evenings.


Ingredients

  • 2 tablespoons olive oil (can substitute with canola or coconut oil)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 cup green beans (fresh or frozen)
  • 1 cup peas (frozen preferred)
  • 1 medium bell pepper, chopped
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 2 tablespoons soy sauce (tamari for gluten-free option)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic, sliced carrots, diced potatoes, and chopped bell pepper. Cook for another 5 minutes.
  3. Pour in the vegetable broth, and add the tomato paste, soy sauce, thyme, and rosemary. Stir and bring to a gentle simmer.
  4. After about 10 minutes, add the green beans and peas. Continue cooking for another 5-10 minutes or until all vegetables are tender.
  5. Adjust salt and pepper to taste just before serving.
  6. Ladle the stew into bowls and garnish with fresh parsley.

Notes

For a thicker stew, mash some potatoes against the side of the pot. Serve with crusty bread or biscuits.
