- 2 tablespoons olive oil (can substitute with canola or coconut oil)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 medium potatoes, diced
- 1 cup green beans (fresh or frozen)
- 1 cup peas (frozen preferred)
- 1 medium bell pepper, chopped
- 4 cups vegetable broth
- 2 tablespoons tomato paste
- 2 tablespoons soy sauce (tamari for gluten-free option)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic, sliced carrots, diced potatoes, and chopped bell pepper. Cook for another 5 minutes.
- Pour in the vegetable broth, and add the tomato paste, soy sauce, thyme, and rosemary. Stir and bring to a gentle simmer.
- After about 10 minutes, add the green beans and peas. Continue cooking for another 5-10 minutes or until all vegetables are tender.
- Adjust salt and pepper to taste just before serving.
- Ladle the stew into bowls and garnish with fresh parsley.
Notes
For a thicker stew, mash some potatoes against the side of the pot. Serve with crusty bread or biscuits.
