Description

Ingredients

  • 1 lb gnocchi (store-bought or homemade)
  • 1 lb boneless, skinless chicken breasts (diced)
  • 6 slices thick-cut bacon (chopped)
  • 4 cups fresh baby spinach
  • 1 cup heavy cream
  • 3 cloves garlic (minced)
  • 1 cup low-sodium chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, cook chopped bacon until crispy. Remove from skillet and set aside.
  2. In the same skillet, sauté minced garlic for about a minute until fragrant.
  3. Add diced chicken and cook until golden brown and cooked through, about 5-7 minutes.
  4. Stir in fresh spinach until wilted, about 2 minutes.
  5. Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  6. Add uncooked gnocchi to the skillet and cook until they float, around 3-5 minutes.
  7. Stir in grated Parmesan cheese until melted. Serve hot.

Notes

For a thicker sauce, simmer longer or add a cornstarch slurry. Consider topping with extra Parmesan and cracked pepper.
