- 1 lb gnocchi (store-bought or homemade)
- 1 lb boneless, skinless chicken breasts (diced)
- 6 slices thick-cut bacon (chopped)
- 4 cups fresh baby spinach
- 1 cup heavy cream
- 3 cloves garlic (minced)
- 1 cup low-sodium chicken broth
- 1/2 cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, cook chopped bacon until crispy. Remove from skillet and set aside.
- In the same skillet, sauté minced garlic for about a minute until fragrant.
- Add diced chicken and cook until golden brown and cooked through, about 5-7 minutes.
- Stir in fresh spinach until wilted, about 2 minutes.
- Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
- Add uncooked gnocchi to the skillet and cook until they float, around 3-5 minutes.
- Stir in grated Parmesan cheese until melted. Serve hot.
Notes
For a thicker sauce, simmer longer or add a cornstarch slurry. Consider topping with extra Parmesan and cracked pepper.
