- 4 cups frozen corn, thawed and drained
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup grated cheddar cheese
- 1/2 cup mayonnaise
- 1 tablespoon fresh lime juice
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 1/2 cup crispy bacon bits
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large mixing bowl, combine the thawed corn, diced red bell pepper, diced green bell pepper, and finely chopped red onion.
- Gently toss in the grated cheddar cheese.
- In a separate small bowl, whisk together the mayonnaise, fresh lime juice, chili powder, salt, and pepper until well combined.
- Pour the dressing over the vegetable mixture and stir until well coated.
- Fold in the crispy bacon bits and half of the chopped cilantro.
- Taste and adjust seasoning as needed, then transfer to a serving bowl and garnish with remaining cilantro.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
For a lighter version, substitute Greek yogurt for mayonnaise. To make it vegetarian, omit the bacon and use crispy chickpeas instead.
