- 20 oz cheese tortellini
- 1 lb steak (sirloin or ribeye)
- Salt
- Black pepper
- Garlic powder
- Smoked paprika
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup whole milk
- 1 1/4 cups parmesan, shredded or freshly grated
- Parsley, chopped (optional)
- Red pepper flakes (optional)
- Cracked black pepper (optional garnish)
Instructions
- Cook the tortellini in salted boiling water according to package instructions until al dente. Drain and reserve a cup of pasta water.
- Season the steak with salt, pepper, garlic powder, and smoked paprika. Sear the steak in a hot skillet with olive oil for 4-5 minutes per side, or until medium-rare. Let it rest.
- In the same skillet, melt butter and add minced garlic. Cook until fragrant, then pour in heavy cream and whole milk, whisking to combine. Gradually stir in parmesan until smooth.
- Slice the rested steak and add it to the sauce along with the cooked tortellini. Toss everything until well-coated.
- Garnish with parsley, red pepper flakes, and cracked black pepper, then serve.
Notes
Opt for ribeye for tenderness or sirloin for a leaner option. Adjust seasonings to taste and add lemon juice if the sauce is too rich.
