Ingredients

- 1 cup quinoa
- 2 cups vegetable broth or water
- 1 apple, diced (such as Honeycrisp or Granny Smith)
- 1/2 cup dried cranberries
- 1/4 cup chopped nuts (walnuts or pecans)
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water to remove any bitterness and then drain it.
- Combine the drained quinoa with vegetable broth or water in a medium-sized pot. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
- Prepare the dressing by whisking together olive oil and apple cider vinegar in a small bowl. Add salt and pepper to taste.
- Once the quinoa is cooked, let it cool for a few minutes, then transfer it to a large mixing bowl. Add the diced apple, dried cranberries, chopped nuts, and parsley.
- Drizzle the dressing over the salad and toss gently to combine all the ingredients thoroughly. Taste and adjust seasoning if needed, then serve!
Notes
For added crunch, consider roasting the nuts before adding them to the salad.
