Description

A vibrant and nutrient-packed salad combining quinoa, apples, and cranberries for a delicious and healthy dish.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 apple, diced
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. In a saucepan, combine quinoa and water; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy.
  2. In a large bowl, combine cooked quinoa, diced apple, dried cranberries, chopped nuts, red onion, and parsley.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
  4. Pour dressing over the salad and mix well.
  5. Serve chilled or at room temperature.

Notes

Rinse quinoa before cooking to remove bitterness. Adjust the seasoning to taste.
