Ingredients

- 1 cup quinoa
- 2 cups water
- 1 apple, diced
- 1/2 cup dried cranberries
- 1/4 cup chopped walnuts or pecans
- 1/4 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water. In a saucepan, combine quinoa and water; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy.
- In a large bowl, combine cooked quinoa, diced apple, dried cranberries, chopped nuts, red onion, and parsley.
- In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
- Pour dressing over the salad and mix well.
- Serve chilled or at room temperature.
Notes
Rinse quinoa before cooking to remove bitterness. Adjust the seasoning to taste.
