Description

Ingredients

  • 1 tablespoon all-purpose flour (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a large bowl, combine the pumpkin puree, eggs, oil, vanilla extract, and sugar. Mix until well blended.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  5. For the cream cheese filling, beat the softened cream cheese, egg, sugar, and flour together until smooth and creamy.
  6. Pour half of the pumpkin batter into the prepared loaf pan and spread it evenly.
  7. Spoon the cream cheese mixture over the pumpkin batter and carefully spread it to cover the surface.
  8. Pour the remaining pumpkin batter over the cream cheese layer, spreading it evenly.
  9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For best results, avoid overmixing the batter. Use room temperature ingredients for a smoother filling and check for doneness early to prevent overbaking.
