Description

A delightful twist on the classic Italian pasta dish, featuring crispy bacon and vibrant green peas in a creamy sauce.

Ingredients

Scale
  • 200g spaghetti
  • 100g bacon, diced
  • 1 cup frozen peas
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Cook the spaghetti according to package instructions until al dente, saving some pasta water.
  2. In a large skillet, heat olive oil over medium heat and add the diced bacon, cooking until crispy.
  3. Add minced garlic and frozen peas to the skillet and cook for an additional 2-3 minutes.
  4. In a bowl, whisk together the eggs and Parmesan cheese until well combined.
  5. Drain the spaghetti and add it to the skillet with the bacon and peas, remove from heat.
  6. Quickly pour the egg and cheese mixture over the pasta, stirring vigorously to create a creamy sauce.
  7. Season with salt and pepper to taste and serve immediately.

Notes

For a vegan option, use tofu or tempeh bacon and substitute the eggs with nutritional yeast and plant-based cream.
