Description

A rich and creamy pasta salad featuring al dente rotini, crispy bacon, and vibrant veggies, perfect for summer picnics or gatherings.


Ingredients

  • 8 oz rotini pasta
  • 1 cup cooked bacon, chopped
  • 1 cup cheddar cheese, shredded
  • 1/2 cup green onions, chopped
  • 1 cup frozen peas, thawed
  • 1/2 cup mayonnaise
  • 1/2 cup ranch dressing
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1/2 tsp garlic powder

Instructions

  1. Bring a large pot of salted water to a boil and cook the rotini pasta according to package directions. Drain and rinse under cold water.
  2. In a medium bowl, whisk together mayonnaise, ranch dressing, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until smooth.
  3. In a large mixing bowl, combine cooled pasta, crispy bacon, cheddar cheese, green onions, and peas. Fold in the dressing until well combined.
  4. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
