Ingredients

  • 1 lb (450g) gnocchi
  • 1 medium-sized butternut squash, peeled, seeded, and cubed
  • 1 lb (450g) Italian sausage
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh sage leaves, for garnish
  • Grated nutmeg, optional

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the butternut squash cubes with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for 25-30 minutes until tender and caramelized.
  3. Boil a large pot of salted water. Add the gnocchi and cook according to package instructions, usually until they float, about 2-3 minutes. Drain and set aside.
  4. Heat the remaining olive oil in a large skillet over medium heat, add the diced onion, and cook until translucent, about 5 minutes.
  5. Add the Italian sausage to the skillet, breaking it up while it cooks. Cook until browned, about 8 minutes.
  6. Add the minced garlic and cook for an additional minute until fragrant.
  7. Pour in the chicken broth and stir, scraping up any brown bits. Add the roasted butternut squash and cooked gnocchi to the skillet.
  8. Reduce the heat to low and pour in the heavy cream. Stir to combine and let it simmer for 5 minutes until slightly thickened.
  9. Stir in the grated Parmesan cheese until well mixed. Season with salt, pepper, and a pinch of nutmeg if using.
  10. Serve immediately with fresh sage leaves as garnish.

Notes

Cut squash evenly to ensure even cooking. Don’t overcook the gnocchi. Use fresh ingredients for best flavor.
