Description

A delightful creamy soup combining roasted garlic and sharp cheddar with fresh cauliflower, perfect for a comforting meal.


Ingredients

Scale
  • 1 head cauliflower, chopped into florets
  • 1 bulb garlic, roasted
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Chop the cauliflower into small florets and dice the onion. Roast the garlic wrapped in foil at 400°F for about 30 minutes until golden.
  2. Heat olive oil in a large pot over medium heat. Sauté the onion until translucent, about 5 minutes.
  3. Add chopped cauliflower and roasted garlic to the pot. Pour in vegetable broth, bring to a simmer, and cover. Cook for about 20 minutes or until cauliflower is very tender.
  4. Blend the soup until smooth, taking care with hot liquids.
  5. Return the blended mixture to low heat, stir in milk or cream and shredded cheddar until melted. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh herbs if desired.

Notes

Experiment with different cheeses and adjust seasoning to your taste. It can also be made vegan by substituting milk and cream with plant-based options.
