- 8 ounces chicken broth
- 8 ounces whole milk
- 3 tablespoons unsalted butter
- ½ small onion, diced
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 4 ounces sharp cheddar cheese, grated
Instructions
- In a medium saucepan, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 3-5 minutes.
- Stir in the rice, cooking for a couple of minutes until it is lightly toasted.
- Pour in the chicken broth and milk, then season with paprika, salt, and pepper. Stir to combine.
- Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and simmer for about 18-20 minutes until the rice is cooked and has absorbed the liquids.
- Remove the pot from heat and add the grated cheddar cheese. Stir until the cheese is melted and everything is well combined.
Notes
For extra creaminess, consider blending in a bit of cream cheese while stirring in the cheddar.
