Description
A comforting dish of tender chicken and pillowy gnocchi in a creamy sauce, perfect for family dinners or gatherings.
Ingredients
Scale
- 1 lb (450 g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tsp Italian seasoning
- 1/4 tsp crushed red pepper flakes (optional)
- 1 package (16 oz / 450 g) potato gnocchi
- 1 cup baby spinach (optional)
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped for garnish
Instructions
- Season the chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat, then add the chicken. Cook until golden brown and cooked through, about 5–7 minutes. Remove and set aside.
- In the same skillet, add the chopped onion and minced garlic. Sauté until fragrant and softened, about 2–3 minutes.
- Pour in the chicken broth, heavy cream, Italian seasoning, and crushed red pepper flakes (if using). Stir and bring to a gentle simmer.
- Add the gnocchi to the simmering sauce and cook according to package instructions, usually 2–3 minutes, or until they float to the top.
- Return the cooked chicken to the skillet and stir to combine. If using spinach, add it now and cook until wilted. Mix in the grated Parmesan cheese.
- Garnish with fresh parsley and additional Parmesan. Serve hot and enjoy!
Notes
For a lighter sauce, substitute half of the heavy cream with chicken broth or milk.
