Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 2-3 minutes.

- Remove the chicken from the skillet and set aside.
- Pour in the chicken broth, stirring to scrape up any browned bits. Bring to a simmer, then reduce the heat and add the heavy cream.
- Stir in the rice, ensuring it’s well mixed with the cream sauce. Return the chicken to the skillet, cover, and let it simmer until the rice is cooked, about 15-20 minutes.
- Garnish with fresh parsley before serving.
