Ingredients

  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup beef or vegetable broth
  • ¾ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (plus more for garnish)

Instructions

  1. Cook the Linguine: Bring a large pot of salted water to a boil and cook the linguine according to package directions until al dente. Drain the pasta, reserving ½ cup of the pasta water.
  2. Prepare the Steak: Season steak pieces with salt, black pepper, and smoked paprika.
  3. Sear the Steak: Heat olive oil in a skillet over medium-high heat and sear steak bites until browned, about 1–2 minutes per side. Remove and keep warm.
  4. Make the Sauce: In the same skillet, reduce heat to medium, add butter, and melt while scraping up browned bits. Sauté minced garlic for 1–2 minutes until fragrant.
  5. Combine Ingredients: Stir in Dijon mustard and lemon juice, then pour in heavy cream and broth, bringing it to a gentle simmer for 2–3 minutes. Add Parmesan cheese and stir until smooth.
  6. Mix Everything Together: Add drained linguine, fresh spinach, and reserved steak bites to the skillet. Toss thoroughly until the spinach wilts and pasta is coated. Adjust sauce consistency with reserved pasta water if needed.
  7. Finish and Serve: Remove from heat, sprinkle with parsley and extra Parmesan cheese, and serve immediately.
