Description

A comforting Tex-Mex soup made with ground beef, vegetables, and a creamy base, perfect for chilly evenings or family gatherings.


Ingredients

  • 1 cup Diced Onion
  • 2 cloves Minced Garlic
  • 4 cups Beef Broth
  • 14.5 oz Diced Tomatoes
  • 1 cup Corn
  • 1 can Black Beans
  • 2 medium Potatoes
  • 1 tbsp Smoked Paprika
  • 2 tbsp Chili Powder
  • 1 tbsp Cumin
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 cup Heavy Cream
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned, breaking it apart as it cooks.
  2. Add the diced onions and minced garlic, sautéing until the onions are translucent and fragrant.
  3. Pour in the beef broth and diced tomatoes, stirring to combine.
  4. Add the corn, black beans, and diced potatoes, followed by the spices. Bring to a simmer.
  5. After about 15 minutes, stir in the heavy cream and shredded cheddar cheese until melted and smooth.
  6. Taste and adjust seasoning as necessary before serving.

Notes

For a lighter option, you can use ground turkey or substitute the heavy cream with coconut milk.
