- 1 cup Diced Onion
- 2 cloves Minced Garlic
- 4 cups Beef Broth
- 14.5 oz Diced Tomatoes
- 1 cup Corn
- 1 can Black Beans
- 2 medium Potatoes
- 1 tbsp Smoked Paprika
- 2 tbsp Chili Powder
- 1 tbsp Cumin
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 cup Heavy Cream
- 1 cup Shredded Cheddar Cheese
Instructions
- In a large pot, cook the ground beef over medium heat until browned, breaking it apart as it cooks.
- Add the diced onions and minced garlic, sautéing until the onions are translucent and fragrant.
- Pour in the beef broth and diced tomatoes, stirring to combine.
- Add the corn, black beans, and diced potatoes, followed by the spices. Bring to a simmer.
- After about 15 minutes, stir in the heavy cream and shredded cheddar cheese until melted and smooth.
- Taste and adjust seasoning as necessary before serving.
Notes
For a lighter option, you can use ground turkey or substitute the heavy cream with coconut milk.
