- 1 lb Ground Beef (or turkey or meat alternative)
- 1 large Onion (yellow or white)
- 3 cloves Garlic (minced)
- 4 cups Beef Broth (or vegetable broth)
- 14.5 oz Diced Tomatoes (canned with juice)
- 1 cup Corn (canned or frozen)
- 15 oz Black Beans (drained and rinsed)
- 2 medium Potatoes (diced small)
- 1 tbsp Smoked Paprika
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1 tsp Salt
- 0.5 tsp Black Pepper
- 1 cup Heavy Cream (or coconut milk)
- 1 cup Shredded Cheddar Cheese
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Pour in the beef broth, diced tomatoes, corn, black beans, and diced potatoes. Stir until combined.
- Season with smoked paprika, chili powder, cumin, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in the heavy cream (or coconut milk) and shredded cheddar cheese, mixing until melted and creamy.
- Serve hot, garnished with extra cheese or chopped herbs if desired.
Notes
Quality ground meat makes a difference. Adjust seasoning to taste and consider vegetable add-ins for flavor and nutrition.
