Description

A comforting and delicious dish combining tender chicken, creamy cheese, fresh spinach, and chewy gnocchi, perfect for family dinners or gatherings.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 16 oz fresh or frozen gnocchi
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • ½ cup crispy bacon bits
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper

Instructions

  1. Chop the chicken into bite-sized pieces and season with salt, pepper, garlic powder, and onion powder.
  2. Heat oil in a skillet over medium-high heat, add the seasoned chicken and cook until golden brown for about 5-7 minutes.
  3. Lower the heat and mix in the cream cheese and chicken broth, stirring until smooth.
  4. Add the gnocchi and spinach, cover the skillet, and simmer for 5-7 minutes until the gnocchi are tender.
  5. Stir in the cheddar cheese until melted and sprinkle with crispy bacon bits before serving.

Notes

For a lighter version, consider using Greek yogurt instead of cream cheese. Feel free to add more garlic or fresh herbs for extra flavor.
