- 3–4 pieces boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
- 16 oz fresh or frozen gnocchi
- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 4 cups fresh spinach
- 1 cup shredded cheddar cheese
- 1/2 cup crispy bacon bits
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Cut the chicken into bite-sized pieces and measure all ingredients in advance.
- In a large skillet over medium-high heat, heat about 1 tablespoon of oil and add chicken. Cook for 5–7 minutes until golden brown.
- Reduce heat to medium-low and stir in cream cheese and chicken broth until smooth.
- Add the gnocchi and spinach, cover and simmer for 5–7 minutes until tender.
- Stir in shredded cheddar cheese and crispy bacon bits until melted. Serve hot.
Notes
Use soft cream cheese for a smoother sauce. Swap spinach with other veggies like kale or frozen peas for variation.
