Description

A comforting blend of tender chicken, pillowy gnocchi, and a creamy sauce made with cream cheese and chicken broth, perfect for weeknight meals.


Ingredients

  • 3–4 pieces boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 1/2 cup crispy bacon bits
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Cut the chicken into bite-sized pieces and measure all ingredients in advance.
  2. In a large skillet over medium-high heat, heat about 1 tablespoon of oil and add chicken. Cook for 5–7 minutes until golden brown.
  3. Reduce heat to medium-low and stir in cream cheese and chicken broth until smooth.
  4. Add the gnocchi and spinach, cover and simmer for 5–7 minutes until tender.
  5. Stir in shredded cheddar cheese and crispy bacon bits until melted. Serve hot.

Notes

Use soft cream cheese for a smoother sauce. Swap spinach with other veggies like kale or frozen peas for variation.
