Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese, softened
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 cups potato gnocchi
  • 1/4 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Cut the chicken breasts into bite-sized pieces. In a large skillet, heat the olive oil over medium heat and add the chicken. Season with garlic powder, onion powder, paprika, salt, and black pepper. Cook for about 6-7 minutes until the chicken is no longer pink. Remove from skillet and set aside.
  2. Add the cream cheese and chicken broth to the same skillet; stir until melted and smooth.
  3. Pour in the heavy cream and let it come to a gentle simmer for 2-3 minutes to thicken.
  4. Stir in shredded cheddar cheese until melted, creating a creamy sauce.
  5. Toss in the gnocchi to coat with the sauce. Cover and let cook for 3-4 minutes, until tender.
  6. Return the chicken, crumbled bacon, and green onions to the skillet. Mix and heat through.
  7. Remove from heat and garnish with fresh parsley. Serve immediately.

Notes

For a lighter option, use half-and-half instead of heavy cream. Can substitute chicken for mushrooms for a vegetarian dish.
