- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces cream cheese, softened
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 cups potato gnocchi
- 1/4 cup cooked and crumbled bacon
- 1/4 cup chopped green onions
- 1 tablespoon chopped fresh parsley
Instructions
- Cut the chicken breasts into bite-sized pieces. In a large skillet, heat the olive oil over medium heat and add the chicken. Season with garlic powder, onion powder, paprika, salt, and black pepper. Cook for about 6-7 minutes until the chicken is no longer pink. Remove from skillet and set aside.
- Add the cream cheese and chicken broth to the same skillet; stir until melted and smooth.
- Pour in the heavy cream and let it come to a gentle simmer for 2-3 minutes to thicken.
- Stir in shredded cheddar cheese until melted, creating a creamy sauce.
- Toss in the gnocchi to coat with the sauce. Cover and let cook for 3-4 minutes, until tender.
- Return the chicken, crumbled bacon, and green onions to the skillet. Mix and heat through.
- Remove from heat and garnish with fresh parsley. Serve immediately.
Notes
For a lighter option, use half-and-half instead of heavy cream. Can substitute chicken for mushrooms for a vegetarian dish.
