- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups ramen noodles
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup fresh vegetables (such as spinach, carrots, and bell peppers)
- 1 cup heavy cream
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chicken breasts and cook until browned and cooked through, about 6-8 minutes per side. Remove from pot and set aside.
- In the same pot, add garlic and sauté for 1-2 minutes until fragrant.
- Pour in chicken broth and bring to a simmer. Add ramen noodles and cook according to package instructions.
- While noodles are cooking, slice the cooked chicken into strips.
- Once noodles are done, stir in the heavy cream and add fresh vegetables. Cook for an additional 3-4 minutes until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with sliced green onions.
Notes
For a lighter option, consider using half-and-half instead of heavy cream. Adjust the seasoning and add fresh ingredients for more flavor.
