- 1 cup spinach

Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent.
- Pour in the vegetable or chicken broth and bring it to a gentle simmer.
- Stir in the gnocchi and cook according to package instructions, usually around 2-3 minutes, until they float to the top.
- Reduce the heat and add the heavy cream and spinach, cooking until the spinach wilts.
- Season the soup with salt and pepper to taste.
- Serve hot, garnished with freshly grated Parmesan cheese.
Notes
Use fresh or homemade gnocchi for the best flavor. For a lighter version, substitute heavy cream with half-and-half.
