Ingredients

- 1 package of gnocchi
- 2 tablespoons olive oil
- 4 cloves of garlic, minced
- 1 onion, chopped
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 cups spinach
- Salt and pepper to taste
- Grated Parmesan cheese (for serving)
- Crusty bread (for serving)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic; sauté until the onion is translucent.
- Pour in the broth and bring to a boil.
- Add gnocchi and cook according to package instructions, usually about 3 minutes.
- Reduce heat and stir in heavy cream and spinach; cook until spinach wilts.
- Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese and alongside crusty bread.
Notes
Sauté garlic and onions first to develop their flavors and avoid overcooking. For a lighter soup, replace half of the heavy cream with milk or a non-dairy alternative.
