- 4 chicken thighs
- 2 cups mushrooms, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Season the chicken thighs with salt and pepper, then add them to the skillet. Cook until browned on both sides and cooked through, about 7-8 minutes per side. Remove from skillet and set aside.
- In the same skillet, add chopped onion and sliced mushrooms. Sauté until mushrooms are browned and onions are translucent, about 5 minutes.
- Add minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream, and add salt and pepper to taste. Let the sauce thicken slightly, about 3-4 minutes.
- Return the chicken thighs to the skillet and coat them in the sauce.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, marinate the chicken thighs in garlic and herbs for a few hours before cooking. You can also add grated Parmesan cheese to the sauce for an extra cheesy flavor.
