Ingredients
1 pound chicken breast or thighs sliced
12 ounces pasta fettuccine or penne
4 garlic cloves minced
1 cup heavy cream
1 cup freshly grated parmesan cheese
2 tablespoons butter
1 tablespoon olive oil
½ cup chicken broth
Salt and black pepper to taste
1 teaspoon Italian seasoning
Fresh parsley for garnish
Instructions
1. Season chicken with salt, pepper, and Italian herbs. Sear in butter and olive oil until golden, then set aside.
2. In the same skillet, sauté minced garlic until fragrant. Pour in chicken broth and stir to lift flavorful bits from the pan.
3. Add heavy cream and stir gently over low heat until slightly thickened.
4. Gradually add parmesan cheese, stirring until sauce becomes smooth and creamy.
5. Boil pasta until al dente, reserve ½ cup pasta water, and drain.
6. Add pasta to the skillet, toss in the sauce, and adjust with pasta water if needed.
7. Return chicken to the pan, stir, and let everything simmer together for 1 minute.
8. Garnish with parsley and extra parmesan before serving.
Notes
For a lighter option, use half and half instead of heavy cream.
Add vegetables like spinach, mushrooms, or sun dried tomatoes for variation.
Shrimp or bacon can be swapped in for the chicken.
