Description

A delightful dish featuring succulent shrimp in a velvety garlic sauce served over creamy mashed potatoes for a comforting experience.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tablespoons unsalted butter for mashed potatoes
  • Fresh parsley, chopped, for garnish

Instructions

  1. Place cubed potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  2. Drain potatoes and return to the pot. Add milk and 2 tablespoons of butter, then mash until smooth. Season with salt and black pepper, and keep warm.
  3. In a skillet, heat olive oil over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. In the same skillet, lower heat and add 2 tablespoons of butter. Stir in minced garlic and sauté for about 1 minute.
  5. Pour in heavy cream, stirring to combine. Simmer for 2-3 minutes until slightly thickened.
  6. Stir in Parmesan cheese until melted. Add lemon juice, seasoning with salt and black pepper.
  7. Return shrimp to skillet and coat in the sauce. Cook for an additional 2 minutes to warm through.
  8. Serve by placing mashed potatoes on a plate, topping with the shrimp mixture and garnish with fresh parsley.

Notes

Using fresh shrimp will enhance flavor. Adjust seasoning to your taste before serving.
