Description
A delightful dish that combines soft gnocchi with fresh spinach and tangy feta in a rich creamy sauce.
Ingredients
Scale
- 1 pound gnocchi
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for topping (optional)
Instructions
- Boil water in a large pot and cook the gnocchi according to the package instructions, until they float to the surface. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about a minute until fragrant.
- Toss in the fresh spinach and cook until wilted, about 2-3 minutes.
- Pour in the heavy cream and bring to a gentle simmer, stirring occasionally until slightly thickened.
- Stir in the crumbled feta cheese until melted and combined.
- Add the cooked gnocchi to the skillet and gently toss to coat in the creamy sauce.
- Season with salt and pepper to taste. Serve warm, topped with grated Parmesan cheese if desired.
Notes
For a lighter sauce, consider substituting half of the heavy cream with broth. Fresh ingredients like spinach make a significant difference in taste.
