Description
A comforting dish of tender potato gnocchi combined with fresh spinach and crumbly feta cheese in a creamy sauce, perfect for weeknight dinners or casual gatherings.
Ingredients
Scale
- 1 package of gnocchi
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for garnish (optional)
Instructions
- Cook the gnocchi according to the package instructions, usually by boiling them in salted water until they float. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the fresh spinach to the skillet and cook until it wilts, about 2 minutes.
- Pour in the heavy cream and mix in the crumbled feta cheese. Stir until the sauce is heated through and the feta softens.
- Toss the cooked gnocchi into the skillet, ensuring each piece is well-coated. Season with salt and pepper to taste.
- Serve warm, possibly garnished with grated Parmesan cheese.
Notes
Avoid overcooking the gnocchi to prevent a mushy texture. Use fresh spinach for the best flavor, and consider adding a pinch of nutmeg for extra warmth.
