Instructions
- In a large pot of boiling salted water, cook the gnocchi according to package instructions until they float to the top. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Stir in the heavy cream and bring to a simmer, allowing it to thicken slightly.
- Add the cooked gnocchi and crumbled feta cheese, stirring gently to combine.
- Season with salt and pepper to taste and serve hot, topped with Parmesan cheese if desired.
