- 400 g linguine or spaghetti
- 2 tablespoons olive oil
- 200 g smoky bacon, chopped
- 2 large chicken breasts, thinly sliced
- 3 cloves garlic, minced
- 3 large eggs
- 100 ml heavy cream
- 1 cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- 1 cup frozen peas, thawed
- Fresh parsley, chopped, for garnish
Instructions
- Fill a large pot with salted water and bring it to a boil. Add the pasta and cook until al dente, reserving 1 cup of pasta water before draining.
- In a large pan over medium heat, add the olive oil. Once hot, add the chopped bacon and cook until crispy. Remove bacon and set aside on a paper towel.
- In the bacon drippings, add the thinly sliced chicken breasts and cook until browned. Add minced garlic and sauté until fragrant.
- Whisk together the eggs, heavy cream, and grated Parmesan cheese in a separate bowl. Season with salt and pepper.
- Lower the pan heat and add the pasta, chicken, garlic, and reserved bacon. Mix in the thawed peas.
- Slowly pour the egg mixture over the pasta while stirring constantly to create a creamy sauce. Add reserved pasta water as needed to achieve the desired consistency.
- Mix until the pasta is well coated in the sauce, then transfer to serving plates.
- Garnish with chopped parsley and serve immediately with extra Parmesan on the side.
Notes
For best results, keep the heat low when adding the egg mixture to avoid scrambling the eggs.
