Description

Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup heavy cream
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Feta cheese for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-7 minutes per side until browned and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onions and minced garlic. Sauté until softened, about 2-3 minutes.
  5. Add halved cherry tomatoes and spinach; cook until the spinach wilts and tomatoes soften.
  6. Pour in the heavy cream and add oregano. Stir to combine.
  7. Return the chicken to the skillet and heat through for about 2 minutes.
  8. Serve garnished with crumbled feta cheese.
