- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1/2 cup heavy cream
- 1 teaspoon oregano
- Salt and pepper to taste
- Feta cheese for garnish
Instructions
- Heat the olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-7 minutes per side until browned and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onions and minced garlic. Sauté until softened, about 2-3 minutes.
- Add halved cherry tomatoes and spinach; cook until the spinach wilts and tomatoes soften.
- Pour in the heavy cream and add oregano. Stir to combine.
- Return the chicken to the skillet and heat through for about 2 minutes.
- Serve garnished with crumbled feta cheese.
