- 1 pound chicken breast, diced
- 8 ounces mushrooms, sliced
- 1 cup wild rice, rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until fragrant, about 2-3 minutes.
- Add the diced chicken to the pot and cook until browned, around 5-7 minutes.
- Stir in the sliced mushrooms and cook until softened, about 3-5 minutes.
- Add the rinsed wild rice and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes or until rice is tender.
- Stir in the heavy cream and season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with fresh parsley.
Notes
Use bone-in chicken thighs for extra flavor. Rinse wild rice before cooking for better texture.
