Description

A comforting bowl of creamy mushroom chicken and wild rice soup combining tender chicken, earthy mushrooms, and hearty wild rice in a rich, creamy broth.


Ingredients

  • 1 pound chicken breast, diced
  • 8 ounces mushrooms, sliced
  • 1 cup wild rice, rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until fragrant, about 2-3 minutes.
  2. Add the diced chicken to the pot and cook until browned, around 5-7 minutes.
  3. Stir in the sliced mushrooms and cook until softened, about 3-5 minutes.
  4. Add the rinsed wild rice and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes or until rice is tender.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Ladle the soup into bowls and garnish with fresh parsley.

Notes

Use bone-in chicken thighs for extra flavor. Rinse wild rice before cooking for better texture.
