- 1 cup orzo pasta
- 2 cups vegetable or chicken broth
- 1 cup broccoli florets (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: Freshly ground black pepper and extra cheddar for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until it becomes translucent.
- Stir in the minced garlic and garlic powder, cooking for about 1 minute. Then add in the orzo pasta, allowing it to toast for another 1-2 minutes.
- Pour in the vegetable or chicken broth, bring to a boil, then reduce the heat to a simmer. Add the broccoli florets, cover, and cook for 8-10 minutes, stirring occasionally.
- Once the orzo is cooked, remove the pot from heat. Stir in the heavy cream and shredded cheddar cheese until both are melted and well-combined.
- Finish by seasoning with salt and pepper to taste. Garnish with additional cheddar cheese and freshly ground black pepper. Serve warm and enjoy!
